OH! I promised an oatmeal cookie recipe, didn't I?
Here it is.
Just Right Oatmeal Cookies
¾ c. sugar
¾ c. brown sugar
2 eggs
2 tsp. vanilla
1 ½ c. flour
1 1/8 tsp baking soda
1 tsp salt
1 tsp cinnamon
½ tsp nutmeg
½ tsp ground cloves
3 c. oatmeal
1 c. pecans (optional)
Preheat oven to 350 F.
In another bowl, sift together the following: flour, baking soda, salt, cinnamon, nutmeg and cloves.
Gradually add the dry ingredients to the butter mixture. Do not over mix.
Add in the oatmeal and finely chopped pecans. Fold in until combined.
Drop cookies using a cookie scoop or a tablespoon onto an
ungreased cookie sheet.
Bake 8-10 minutes until lightly brown. Cool on a rack before serving or freezing.
